Kumara, Potato and Onion Mash

500g kumara          sharp knife
500g potatoes        large saucepan
1 onion masher      100 ml milk
50g butter

Peel and chop the potatoes and kumara into 2cm cubes.

Peel and finely chop the onion.

Cook kumara and potatoes in a large saucepan of water over medium heat.

Bring to the boil and cook covered for 10 to 12 minutes or until soft.

Drain potatoes and kumara and place in a large mixing bowl. Add milk, butter and chopped onions. Mash until smooth.

Serve as a side dish with meat and vegetables.
